Food truck service offers new options, convenience Published May 19, 2015 By Senior Airman Benjamin Gonsier 2nd Bomb Wing Public Affairs BARKSDALE AIR FORCE BASE, Louisiana -- Members of Team Barksdale may look no further than their parking lot, as the Barksdale Exchange is offering them a new way to get lunch. For 90 days, starting May 11, a food truck will be at select locations Monday through Friday and will offer Barksdale personnel a wide assortment of food options. "We serve a main course entrée, two sides, and a drink daily," said Paul Caster, Total Legendary Catering. "We also have a grab-and-go menu such as corn dogs and sandwiches for people who are in a hurry." The service is open 10:00 a.m. to 2:00 p.m. weekdays and offers a new entrée daily. "We've never catered on a military installation before, so it is very exciting to be here," Caster said. "We are at a new location every day, which helps alleviate those who are busy and need to grab something quickly." The Barksdale Exchange realizes how Airmen who support the mission may not be able to get lunch, so they decided to bring lunch to them. "The Exchange always wants to provide conveniences to those executing the mission," said Elena Bedner, Barksdale Exchange Services business manager. "We are always looking for innovative ways to help out our Airmen." Depending on the success of the service, the Exchange plans on bringing out more food trucks. "By bringing food to them, they can focus more on completing the mission on a full stomach," said Bedner.
